There are moments in this industry that genuinely give you a buzz.

This is one of them.

Over the past months I’ve been quietly collaborating with HandFab — a knife maker who doesn’t just make knives, but understands how chefs actually work. The pace of service. The feel of prep. The hours. The abuse. The love.

That collaboration has now turned into something real.

The Sweet Tooth Signature Series.

Why this knife exists

Every chef has that job.

The fiddly one. The repetitive one. The one that deserves the right tool.

For me, that’s shallots, chives, herbs, garlic, garnish prep. Precision work. Long sessions. No drama.

I wanted a knife that:

Every detail was discussed. Tweaked. Used. Abused. Refined.
